What Are Agricultural Commodities? Categories, Markets, and Taxes

Agricultural commodities are raw farm products (grains, livestock, fibers, and tropical crops among them) that are standardized enough to trade in bulk on organized markets, usually through futures contracts. Corn, wheat, soybeans, cattle, coffee, cotton, and sugar all fall into this category, and their prices reach into grocery bills, restaurant menus, clothing costs, and even fuel prices at the pump.

What Counts as an Agricultural Commodity

The Commodity Exchange Act names specific products in its definition of “commodity,” including wheat, cotton, rice, corn, oats, barley, rye, flaxseed, grain sorghums, butter, eggs, potatoes, wool, fats and oils, soybeans, livestock, livestock products, and frozen concentrated orange juice.1Office of the Law Revision Counsel. 7 U.S. Code 1a – Definitions The CFTC’s regulatory definition reaches further, covering commodities derived from living organisms that are fungible within their class and used mainly for human food, animal feed, shelter, or natural fiber.2Federal Register. The word that matters most in that definition is fungibility. One bushel of No. 2 yellow corn meeting USDA grade requirements is interchangeable with any other bushel of the same grade, no matter which farm produced it. A commodity is also not a finished product. Raw cotton is a commodity; a cotton shirt is a consumer good. Once processing, branding, and marketing enter the picture, the commodity market is behind you.

The Main Categories

Grains and Oilseeds

Corn, wheat, and soybeans are the most actively traded agricultural commodities in the world. Corn works as both livestock feed and the primary feedstock for ethanol. Soybeans are crushed into meal for animal feed and oil for cooking and industrial use. Wheat underpins bread and pasta globally. Prices in these three crops set the tone for the wider agricultural complex, because they drive input costs across the food chain.

Livestock and Meat

Live cattle, feeder cattle, and lean hogs trade as commodity contracts. Prices here are tightly tied to feed grain costs, so a drought that spikes corn eventually raises beef and pork. Dairy products such as butter, cheese, and nonfat dry milk also trade as commodities, backed by USDA grading. Soft Commodities

Coffee, cocoa, sugar, and cotton make up the “softs.” These are tropical or plantation crops with production concentrated in specific regions, which makes them especially exposed to localized weather and political instability. A single frost in Brazilian coffee country or a hurricane through a sugar-producing region can move global prices overnight.

How These Markets Trade

Spot Sales

The spot, or cash, market is the simplest form: buyer and seller agree on a price, and the goods change hands promptly. A farmer selling a truckload of harvested wheat to a local grain elevator is a spot transaction. These local markets handle enormous volume, but they are impractical for large-scale international trade because of the shipping, storage, and verification burden.

Futures Contracts

The dominant pricing mechanism is the futures market. A futures contract is a legally binding agreement to buy or sell a standardized quantity and quality of a commodity at a specific price on a set future date.5CME Group. The real value of futures for producers and food companies is hedging. A grower who plants corn in April and expects to harvest in October faces months of price uncertainty. By selling a futures contract at planting time, that grower locks in a known price. If the market drops by harvest, the futures gain offsets the lower cash sale. If the market rises, the grower gives up the upside but still gets the price that was acceptable at planting. Most futures contracts never result in physical delivery. Traders close positions with an offsetting trade before expiration and settle the financial difference.

Basis

The relationship between the local cash price a farmer actually receives and the futures price quoted on the exchange is called the basis. Cash price minus futures price equals basis. If corn futures trade at $4.50 per bushel and the local elevator pays $4.30, the basis is negative $0.20. Basis captures local factors futures cannot reflect on their own, including transportation to the nearest delivery point, local supply conditions, and available storage. Producers watch basis patterns closely: a historically narrow basis signals the market wants immediate sales, while a wide basis encourages storing the crop.

Other Ways In

Futures are the core instrument, but not the only way to gain exposure. Options on futures give the holder the right, not the obligation, to buy or sell a futures contract at a set price. For a farmer, buying a put option works like an insurance policy, setting a price floor while leaving the upside open. Retail investors who want exposure without trading futures directly can use exchange-traded funds that track agricultural indexes, though those products carry their own costs and tracking errors.

What Moves Prices

Weather

Weather is the single most unpredictable variable in these markets. A drought during the pollination window can cut a corn crop by millions of bushels. Excessive rain at harvest damages grain quality and stalls fieldwork. Frost in Brazilian coffee regions has historically triggered sharp price spikes, because coffee trees take years to reach full production and supply cannot be replaced quickly. Livestock disease outbreaks and crop pest infestations create the same effect, pulling supply off the market faster than producers can respond.

Global Demand

Rising incomes in developing economies shift diets toward more meat and dairy, which raises demand for feed grains. Producing a pound of beef takes several pounds of corn and soybean meal, so even modest per-capita protein increases across large populations translate into meaningful demand for row crops.

The Dollar

Most agricultural commodities are priced in U.S. dollars. When the dollar strengthens, American grain gets more expensive for foreign buyers, dampening export demand and pressuring prices lower. A weaker dollar makes U.S. crops cheaper on the world market, boosting exports and supporting prices. Research over the 2000-2022 period found a moderate negative correlation between the dollar’s value and U.S. agricultural export volumes.

Government Policy

Trade tariffs and export restrictions can cut off international flows almost overnight. Domestic subsidies influence planting decisions by making certain crops more profitable than market prices alone would suggest. One of the largest policy-driven demand sources is the Renewable Fuel Standard, which requires renewable fuels to be blended into the U.S. gasoline supply. USDA Reports

The USDA’s World Agricultural Supply and Demand Estimates report, known as WASDE, is the most closely watched government publication in these markets. Released monthly, it provides supply and use forecasts for wheat, corn, soybeans, rice, cotton, and other commodities at both the U.S. and global level.8USDA. Who Regulates the Market

Commodity futures operate under a layered regulatory structure. The Commodity Futures Trading Commission is the primary federal regulator, overseeing exchanges, clearinghouses, and market participants. One of its main tools is the speculative position limit, which caps how many contracts a single trader can hold during the spot month and prevents any one participant from cornering the market. For major agricultural contracts like corn, soybeans, and wheat, the federal spot-month limit is 1,200 contracts each.9Commodity Futures Trading Commission. Anyone doing business in derivatives markets, from futures commission merchants to introducing brokers to trading advisors, must register with the CFTC and join the National Futures Association, which handles day-to-day compliance and background checks.10National Futures Association. How Futures Gains Are Taxed

Commodity futures receive a distinctive tax treatment under Internal Revenue Code Section 1256. Regardless of how long you held the position, gains and losses on regulated futures contracts are split 60% long-term and 40% short-term for capital gains purposes.11Office of the Law Revision Counsel. 26 USC 1256 – Section 1256 Contracts Marked to Market That blended rate is more favorable than the ordinary short-term rate that applies to most other short-duration trading. Section 1256 contracts are also marked to market at year-end, so open positions are treated as if sold on December 31 for tax purposes even if you still hold them. That rule prevents traders from selectively timing gains and losses across tax years.

The 60/40 split applies to exchange-traded futures and options on futures. It does not apply to cash-market grain sales, which farmers report as ordinary business income, and hedging transactions that qualify for hedge treatment under IRS rules follow separate accounting tied to the underlying business rather than the 60/40 split. The distinction matters, and getting it wrong can create unexpected tax liability.
